Summary: This is perfect for a picnic and travels well, just right for a car snack on long drives. The recipe has the quantity of veg I used but use whatever you have. You’ll need about 4 cups.
Ingredients
- 3/4 cup instant couscous
- 3/4 cup vegetable stock
- 1 onion, diced
- 2 carrots, diced
- 1/2 capsicum, diced
- 1/2 head of broccoli in small florets
- 1 zucchini, diced
- 1 cob of corn, chucked
- 2 eggs, lightly beaten
- 1/4 cup plain flour
- 1 tbsp garlic olive oil
- 1/2 tsp cayenne pepper
- 1 tsp dried oregano
- 1/2 cup grated cheese
Instructions
- Pre heat oven to 180C.
- Mix the couscous and stock together in a microwave safe container and microwave for 2mins or until couscous is cooked and fluffy, let cool while you chop up the veggies.
- Microwave chopped veg for 5 mins or until almost tender.
- Mix couscous, veg, oil, eggs, cayenne, oregano and half the cheese. If the mix seems too wet to hold together when pressed frimly with a spoon add the flour a little at a time until it does.
- Firmly pack into a lined loaf tin, sprinkle remaining cheese on top and bake for 30mins.
- Allow to cool in the tin for 20 mins before removing and serving. Great with a little chutney or salsa and can be sliced and toasted.
