
Summary: These are so cute but they are just a small batch of pink sugar cookies with a strawberry & cream topping. They are super easy and you don’t even need a mixer or beaters. As you can imagine, I say ‘I love you’ with food and Mr Ask has no complaints with these tasty treats!
Ingredients
- 60g salted butter, melted
- 75g castor sugar
- 25g brown sugar
- 1 egg yolk
- 1/4 tsp vanilla
- Red or pink food colour, optional
- 85g plain flour
- 1/4 tsp bicab soda
- Sliced strawberries, to decorate
- Whipped cream, to decorate
Instructions
- In a large bowl, stir the butter and sugars. Add the yolk, vanilla and food dye (if using), stirring till combined.
- Mix together the flour and bicarb. Add the flour mix to the rest of the ingredients and mix until just combined.
- Refrigerate dough for an hour until the dough becomes firm. Preheat the oven to 180C. Line baking tray with baking paper.
- Roll out the dough (between sheets of cling film or baking paper if it is sticking) and cut into heart shapes.
- Bake for about 10-12 minutes, until edges just start to turn a very light brown but centers are still soft. As with all sugar cookies be careful not to over bake, especially if your cookies are small!
- Allow the cookies to cool on the tray before transferring them to a cake rack to cool. Decorate with sliced strawberries and cream, just moments before serving (or the cookie will soften with the strawberry juice).
