Summary: I am all about bread! I could live on bread and butter, as long as it’s good quality. But ditching the burger bun makes sense here. You don’t have to worry about adding too much salad and making a towering burger that’s impossible to bite. And without the bread, the burger starts to look healthy enough to justify fries. Perfect! This combo is my go to but you could change the spinach for another leaf (rocket or kale are nice) and add whatever else is in the fridge. Grated carrot, avocado slices, beetroot slices, cucumber slices, roasted capsicum or red onion slices. Ditch the fries and add a fried egg. Customize it till it’s perfect!
Ingredients
- 2 spring onions, chopped
- 1 handful baby spinach
- 1 vege burger patty, I like these ones
- 1-2 slices of cheese
- 1 tblsp hummus
- 6-8 cherry tomatoes, chopped
Instructions
- Pile the spring onions and spinach on a plate, roughly the size of the party you are using.
- Cook the patty to the recipe or package directions. I microwaved my frozen patty for 1 min and then transferred it to a hot frying pan. Once the first side of the party was crispy and had a little char, I flipped it and topped with the cheese slices. When the second side is cooked, rest on top of the spinach mix.
- Top the party with hummus and the chopped tomatoes. Serve with a side of fries.
