Summary: This is my absolute fave icing of all time. Well at least the favourite of the ones I’ve made to date. Not surprising really because caramel is my biggest weakness in terms of sweet things. You can make your own caramel sauce (I have an easy one here), use a store bought sauce or even caramel ice cream topping.
Ingredients
- 125g butter
- 250g icing sugar
- 1 tsp vanilla
- 2/3 cup caramel sauce
Instructions
- Using a stand mixer or electric beaters, beat the butter until smooth and add icing sugar a bit at a time. Add the vanilla and beat for 10mins. Yes, 10 minutes! Well at least 5.
- Add the caramel and beat until well combined and smooth. Be careful not to over beat the caramel, it can become grainy.
- The icing should be nice and fluffy ready to pipe or spread on your cakes.
- Makes enough for 12 cupcakes or a one layer 20cm cake.

How much cream do we put in??
You mention to add cream with the vanilla but in the ingredients there is no mention of cream? Can you clarify please. Thank you.

Quick question when you say cream do you mean pure pouring cream or thickened cream?
Either will work fine, whatever you have on hand. Hope that helps, S x
