Recipe: Chewy Caramels

Summary: I really tried to do this one without a candy or meat thermometer but I couldn’t nail it. All the same it’s very easy and candy/meat thermometers are cheap and easy to come by.

Ingredients

  • 250g butter
  • 1 cup brown sugar, firmly packed
  • 1 (395g) can sweetened condensed milk
  • 150ml golden syrup
  • 1 tsp vanilla

Instructions

  1. Melt butter in 2L microwave container. Add everything else and give it a stir, it doesn’t have to be completely combined.
  2. Cook in the microwave on high for 5mins and test with thermometer. You are looking for a temp of 115-120C.
  3. If you are not there yet, continue on in 1 min bursts till you are. Don’t be tempted to go for a 5min burst or you may burn it as I did the first time! It took me 10 mins in Mummy Asks viciously powerful microwave.
  4. Once you have the right temp, stir well (don’t stress if it seems a little grainy) and pour into a lined lamington tin and allow to cool completely at room temperature.
  5. Cut into bite size pieces with kitchen scissors and wrap individually (or not if you don’t feel the need) in waxed paper and store in the fridge.
