
Summary: Whoopie pies are a delicious cross between a sandwich cookie and a cake. Sort of like those ginger kiss cookies you can get in the bakery section of the supermarket. A nice thin cake layers with buttercream in between. Whoopie Pies are definitely an American thing and chocolate with vanilla or cream cheese icing seems to be the most traditional version. This combo is perfect for us! Mr Ask loves all things chocolate and I see chocolate as a necessary evil (to hold the fillings of chocolate bars in). I adore buttercream but Mr Ask thinks I use too much! These whoopie pies struck the perfect balance. We ate these in record time! Not even enough leftovers for anyone else to taste….
Ingredients
- 125 g butter, softened
- 200g brown sugar
- 1 egg
- 1 tsp vanilla extract
- 150g plain flour
- 75g unsweetened cocoa
- 1 1/2 tsp bicarb soda
- 1/2 tsp baking powder
- 1 cup milk
For Buttercream Filling:
- 250g butter, softened
- 500g icing sugar
- 1 tsp vanilla extract
- 4 tblsp milk
Instructions
- Preheat the oven to 180C and line a couple of baking trays with baking powder
- In a mixer (or with electric beaters) cream the butter and sugar together until pale and fluffy. Add in the egg and vanilla extract and mix till combined.
- In a second bowl, mix together the flour, cocoa, bicarb and baking powder. Add half the dry mix and half the milk to to the creamed sugar mix and stir with a wooden spoon to combine.
- Add in the remaining half of the dry mixture and the milk. Mix until completely combined.
- Using a spoon (or in my case my handy cookie scoop) place tablespoons of the batter onto a lined baking tray . Remember to leave enough space for them to expand.
- Bake for 10-12 minutes or until cakes spring back when lightly tapped (it only took me 10 mins but will depend on size). Remove from the oven and let it cool on the tray for a few minutes before moving on to the cooling rack.
- For the filling: Using a stand or hand mixer, beat all the filling ingredients together, for 10 mins till fluffy.
- Use a cookie scoop or piping bad to apply icing to the flat side of the cake and sandwich the pies together.
