Summary: So easy the kids can do this one for you!!
Ingredients
- 1 cup plain flour (wholemeal is fine)
- 75g cold butter, cut into small cubes
- 120g grated cheese
- A good pinch of cayenne (fresh or dried herbs if you wish or even a teaspoon of my ranch dressing dry mix)
Instructions
- Preheat oven to 180 C.
- Add everything to your food processor and process until it forms a ball. Be patient because it can take a few minutes, if you stop too soon you end up with crumbles that take a bit of kneading to bring together.
- Roll the ball into a log (at this point you could glad wrap and put in the fridge for later).
- With a sharp knife slice into thin rounds and place on a flat baking tray lined with baking paper. Try to rotate which side you are cutting down on because the top of the log does start to flatten a little. It will make around 24 so if you want to be very even you can just continue to cut the log into halves till you have 24.
- Bake for 12 – 14 minutes or until golden brown.
Quick Notes
The sharper the cheese the cheesier the biscuit, I used ½ parmesan and ½ tasty chedder
The dough log can be stored in the freezer so double the recipe and save some for later. I made two batches, baked a dozen, put dozen in the fridge for later and froze a batch.
