Summary: This is a perfect summer meal and the haloumi can be cooked on a BBQ. I also love how quick and easy this is. Make it a gutsy meal with a big salad and some crusty bread. I love some fresh mint with the peas but Mr Ask is not a fan lol.
Ingredients
- 180g haloumi cheese
- 350g frozen peas
- 4 spring onions, sliced
- 3 tblsp sour cream
- 1 lemon
- Chilli, to taste
- Salt
- Pepper
Instructions
- Microwave or boil the peas until just cooked and hot through. Add sour cream, spring onions, chilli, salt and pepper. Mash peas with a potato masher and check seasoning.
- Slice haloumi into 1cm thick slices and place on a hot grill or fry pan for a minute or two each side. Haloumi should be a dark golden brown and blistered.
- Serve with lemon wedges to squeeze over cheese
