Summary: A new fave and such a perfect combination
Ingredients
- 4-6 baby capsicums
- 180g haloumi cheese
- Handful basil, chopped
- Handful parsley, chopped
- 1 lemon, juiced
- 50ml garlic olive oil
- Freshly cracked pepper
Instructions
- Pre heat oven to 180C.
- Cut the capsicums in half and use a small paring knife to remove ribs and seeds.
- Sprinkle the basil and parsley in each capsicum half so it’s evenly distributed.
- Cut the haloumi into small cubes and share between the capsicums.
- Bake for 20-30mins at 180C until capsicums are soft and cheese is browned.
- Whisk the lemon juice, oil and pepper together and drizzle over capsicums, serve!
Quick notes
You could use two small normal size capsicums instead but may need to pre cook them for 10mins before stuffing
