Summary: This is the dessert I made for my ladies lunch last week (mentioned here and main course recipe here). It makes me feel old but I’ve been making these for about 20yrs! I always have the ingredients for these on hand and they’re so quick and easy. Just the thing when you realize at the last minute that you were meant to bring something.
Ingredients
- 1 sheet butter puff pastry
- 2 tblsp sour cream (lite ok)
- 1/2 tsp cinnamon
- 1/2 cup demerara sugar
- 1 lemon, zested
Instructions
- Pre heat oven to 200C.
- Lay your puff pastry on the bench (it’s fine if the plastic is still on the back) and spread half of the sour cream across the pastry.
- Sprinkle with half the cinnamon and half the sugar in an an even layer. Cover with one of the bits of plastic from the pastry (or a bit of glad wrap) and press the sugar into the pastry.
- Carefully flip the pastry over and spread with remaining sour cream. Sprinkle with remaining cinnamon, sugar and the lemon zest. Press the sugar in as before.
- Fold the left & right edges towards the middle , leaving a small gap. Fold in half again. Press down gently and slice into 1.5cm slices.
- Lay the slices on a lined baking tray, pinching the slices so they form a Y shape. Bake for 10 – 15 mins or until puffed and browned. Be sure to keep an eye on them, sugar can burn so quickly!
- Allow to cool on the tray for 10 mins before transferring to a serving plate.
