
Summary: Oh I love it when a plan comes together! Regular readers will know that I always bake cupcakes for family birthdays and this time my niece Tay asked for orange poppyseed cupcakes with cream cheese icing. I was excited to make a new flavour for my box cake mix hacks and the orange theme lends itself perfectly to Halloween, which is just around the corner. To make things fun and pretty I used my Wilton coupler to create the tri coloured frosting, I have a whole write up on how to use it here. I was inspired by the American candy corn, so I went with white yellow and a sort of coral orange. I only added the orange zest to the yellow and orange frosting, so the white stayed white. You could totally go with plain white icing if you prefer and maybe add some candy eyes you can buy, if these are for Halloween.
The recipe is really simple but they taste so beautiful and have a lovely texture; all light and fluffy. You’ll need two oranges for zesting and but you may need extra oranges (or bottled orange juice) to make up the 2/3 cup of orange juice the recipe calls for. If you want to punch up the orange tone of the cake batter, you can add a little orange food dye if you like, I would make mine really orange if I was doing this for Halloween.

Ingredients
- 1 Coles 75c butter cake mix
- 2 eggs
- 1 orange, zest of
- 2/3 cup orange juice
- 1 tblsp poppyseeds
- 3 tblsp vegetable oil
- 250g cream cheese, softened
- 60g butter, softened
- 500g icing sugar
- 1/2 orange, zest only
- Food colour, optional
- Preheat the oven to 160C and line a 12 cup muffin tin with paper patty pan liners.
- In a large bowl, add the cake mix followed by the eggs, orange zest and juice, poppyseeds and oil. Whisk together until smooth and glossy. Divide the batter between the 12 patty pans.
- Bake for 15-18 minutes (mine are always perfect at 17 mins) or until a skewer comes out clean. Allow to cool completely on a rack before frosting.
- To make the cream cheese frosting: Place the cream cheese in the bowl of a stand mixer with the paddle attachment (or with electric beaters) and beat until smooth. Add the butter and beat until combined.
- Add in the icing sugar a bit at time until fully combined. Separate icing into three bowls (if doing tri coloured) before beating in zest.
- Pipe or spread the frosting over the cooled cakes.
