Summary: A lovely way to turn a tin of fruit into a special dessert. It’s a great pantry dessert that uses fresh, canned or frozen fruit. Baking doesn’t get easier than this and not even an egg!
Ingredients
- 125g butter
- 1 cup plain flour
- 1/2 tsp cinnamon
- 1 1/2 tsp baking powder
- 1 cup brown sugar, lightly packed
- 3/4 cup milk or thin cream
- 800g tin of fruit, drained
- 1/4 cup castor sugar
Instructions
- Pre heat oven to 180C.
- Pour melted butter in a baking dish or large cake tin.
- Add flour, baking powder, cinnamon and brown sugar to a bowl and whisk in milk.
- Spoon mixture over butter in pan without stirring, to form an even(ish) layer. Arrange the fruit on top of the batter and sprinkle with the sugar.
- Bake for 30 minutes or until batter is cooked and coming away from the edge of the baking dish/tin.
- Serve with cream or ice cream.
Quick notes
Feel free to use whatever fruit you like instead of peaches.
