Recipe: Pantry Peach Cobbler

Summary: A lovely way to turn a tin of fruit into a special dessert. It’s a great pantry dessert that uses fresh, canned or frozen fruit. Baking doesn’t get easier than this and not even an egg!

Ingredients

  • 125g butter
  • 1 cup plain flour
  • 1/2 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1 cup brown sugar, lightly packed
  • 3/4 cup milk or thin cream
  • 800g tin of fruit, drained
  • 1/4 cup castor sugar

Instructions

  1. Pre heat oven to 180C.
  2. Pour melted butter in a baking dish or large cake tin.
  3. Add flour, baking powder, cinnamon and brown sugar to a bowl and whisk in milk.
  4. Spoon mixture over butter in pan without stirring, to form an even(ish) layer. Arrange the fruit on top of the batter and sprinkle with the sugar.
  5. Bake for 30 minutes or until batter is cooked and coming away from the edge of the baking dish/tin.
  6. Serve with cream or ice cream.

Quick notes

Feel free to use whatever fruit you like instead of peaches.
