Summary: This is a really old number! I’ve been taking this to BBQs for years and it is still a fave. It’s super easy but you need to allow chilling time.
Ingredients
- 1 cup instant couscous
- 1 cup strong stock
- 1/2 tsp ground pepper
- 3 tblsp butter
- 250g baby peas, defrosted
- 125g Parmesan, grated
Instructions
- Add the couscous, stock and pepper to a microwave safe bowl and zap for 2mins. The couscous should be tender, if not give it a little more till it is.
- Add the butter and fluff with a fork to combine. Add peas and use the fork to stir through.
- Chill or allow to come to room temp before stirring the the Parmesan.
- If you have left overs (I make double and almost never do) you can use it to make Veggie Loaf.
