Summary: Mummy Ask took me out for lunch for my birthday and of course we went to one of my fave restaurants, Eden. I adore the interesting cocktails dreamed up by resident mixologist Chad and just had to try the peppered pineapple margarita in the picture (as you can see, by the time the pic was taken I was halfway through!). Since a good bar tender will never talk, I had to create my own offering. It is not the same of course but delightful anyway.
Ingredients
- 60ml tequila
- 60ml fresh lime juice
- 60ml Triple Sec or Cointreau
- 90ml fresh pineapple juice
- salt and pepper for glass rim, if desired
Instructions
- Rim the glasses with coarse salt and pepper, if desired. Quantities aren’t super important here, but you really won’t need as much pepper. Rub the glass rims with a slice of lime and dip into the salt mixture.
- Fill cocktail shaker about halfway full with ice. Add the lime juice, Triple Sec, tequila and pineapple juice. Shake vigorously for 20 to 30 seconds.
- Strain into glass and ENJOY the weekend xxxxxx
