Summary: This salad is such a satisfying mix of rich, roasted veggies and crispy leaves. I love this dressing as it is creamy but not too heavy and indulgent. Mummy Ask nearly drank the dressing on it’s own!
Ingredients
- 2 brown onions
- 2 capsicums
- 1 tblsp olive oil
- 200g salad leaves
- 1 punnet cherry tomatoes
- 1 qty light & creamy dressing
Instructions
- Pre heat the oven to 180C
- Peel the onions and cut into chunks, I like 6 per onion. Cut the capsicums into chunks.
- Add the veg to a baking tray and coat with the oil. Bake for 30-45 mins or until blistering at the edges and cooked through. Allow to cool while to room temp while you make the dressing.
- Arrange the salad leaves, tomatoes, capsicum and onion in a serving bowl and drizzle with dressing.
