Summary: This is a wonderful sweet and spicy salad that is begging to be made for your next BBQ! Trust me it will become a well loved fave. I know it might seem a little odd but it must be tasted to be believed. It was inspired by some chilli sprinkled pineapple I had at a fancy hotel breakfast buffet. As always, adjust the chilli to your taste but I beg you not to omit it! If you mince it very finely you’ll reduce the risk of a too hot bite.
Ingredients
- 1 pineapple, peeled, cored & chopped
- 1 continental cucumber, chopped
- 1/2 red capsicum, chopped
- 4 spring onions, sliced
- 1/2 long red chilli (more or less to taste), minced
- 1/4 tsp fine salt
- 1 lime, juiced
- Coriander to taste
Instructions
- Add everything except salt, lime & coriander juice to a salad bowl and toss to combine.
- Sprinkle the salt and lime juice over the salad and toss again.
- Serve garnished with coriander plus extra for serving.

Really? I dislike fruit in main meal food. Very much. Then again I did try a very delicious watermelon and feta salad a while back and also have a staple salad of pear and rocket I use regularly… perhaps I need to rethink my no fruit in main meal theory.
