Recipe: Double Chocolate Cupcakes

Summary: Simple chocolatey goodness! Do I really need to talk you into a chocolate cupcake?

Ingredients

  • 125g butter, softened
  • 125g castor sugar
  • 125g plain flour
  • 1/2 tsp bicarb soda
  • 1 tsp baking powder
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tblsp cocoa
  • 2 tablsp milk
  • 100g dark chocolate chips
  • Icing
  • 125g butter, softened
  • 250g cups icing sugar
  • 2 tblsp cocoa
  • 2 tblsp milk

Instructions

  1. Pre heat oven to 190C (180 fan forced). Line a 12 cup muffin tin with patty pans.
  2. Cream the butter and sugar in the mixer or with electric beaters, until pale and fluffy.
  3. Add the vanilla and eggs, one at a time and mix by hand until well combined.
  4. Combine all remaining dry ingredients and add to the batter and stir until well combined.
  5. Divide mixture between the 12 patty pans and bake for 15-20 mins or until a skewer comes out clean.
  6. Allow to cool on a rack, completely, before decorating.
  7. To make icing:
  8. Beat the butter until smooth and add the cocoa and icing sugar a bit at a time, add milk and beat for 10mins. Yes, 10 minutes!
  9. The icing should be nice and fluffy ready to pipe or spread on your cupcakes.
