Summary: Just like my stupidly simple Apple cake, this cake was the answer to a crazy cake craving! You know how it is, your curled up watching tv but all you can think about is cake. Warm, moist chocolate cake with a gushy chocolate icing. You start wondering if you have the ingredients and turn on the oven. This cake is your answer! Made in the muffin or dump cake style, it’s quick, easy and uses no special equipment. The warm icing means not having to wait for the cake to cool, although it’s just as nice cool as it is warm. It’s best eaten on the day it’s made but somehow I don’t think that will be a problem. Here you have it, the answer to your ‘must have it now’ chocolate cake needs……
Ingredients
- 1 cup plain flour
- 1 tsp baking powder
- 3/4 cup sugar
- 2 eggs
- 125g butter, melted
- 1 tsp instant coffee granules
- 1/3 cup Cocoa
- 1/4 cup milk
- For Ganache Icing
- 100g dark chocolate, chopped or melts
- 1/3 cup cream
Instructions
- Preheat oven to 180C. Grease and line a 20cm round cake tin.
- Add all the ingredients to a bowl and mix well to combine.
- Scrape the batter into the prepared tin and smooth out the top.
- Bake for 40 minutes or until a cake tester inserted comes out clean. Allow to cool in the tin for 30 mins before turning out and icing.
- To make the ganache icing: Add the cream to a 2 cup, microwave safe jug and microwave for 2 mins or until just boiling.
- Add the chocolate and allow to sit for 2 mins.
- Whisk until smooth and pour over the cake.
