Summary: I’ve been craving a cinnamon treat that is a perfect match for a nice cup of tea or coffee but hadn’t found the right recipe. However, I was cleaning up recently and found a shoebox full of handwritten recipes I thought I’d lost forever. This recipe was hiding in the pile. It’s so tasty and super easy, plus you can (and indeed should) eat it warm.
Ingredients
- 1 cup milk
- 125g butter, softened
- 3/4 cup castor sugar
- 1 tsp vanilla
- 2 eggs
- 2 tsp cinnamon
- 1 tblsp corn flour
- 125g plain flour
- 2 tsp baking powder
- For the topping:
- 1 tblsp butter, melted
- 1/3 cup castor sugar
- 2-3 tsp cinnamon
Instructions
- Pre heat oven to 180C.
- Add everything, in order, to the bowl of a mixer and beat on med/high for 6 mins. Use electric beaters if you don’t have a mixer.
- Pour mix into a greased loaf tin and bake for 35mins or until a skewer comes out clean. Mix together the cinnamon and sugar and set aside.
- Allow to cool 5 mins before turning out onto a cooling rack.
- While the cake is warm, brush with melted butter and sprinkle with cinnamon sugar to taste.Pre heat oven to 180C.
