Summary: So easy and no cooking needed! You could swap the Mint Slice biscuits for Tim Tams and make the topping from dark, milk or even white chocolate. Truly a recipe where the combined is more than the sum of the parts. Sister Ask rates this as one of her top 5 Ask Sarah recipes of ALL TIME!!!!
Ingredients
- 2 x 200g pack Mint Slice biscuits
- 125g cream cheese
- 150ml cream
- 200g chocolate, chopped into small pieces
Instructions
- Add the biscuits to the food processor and process till fine crumbs.
- Cube the cream cheese and microwave for around 40 seconds, until very soft and quite hot. Add the cream cheese to the biscuit crumbs and process till a uniform, almost dough forms.
- Press into a small, lined lamington tin and chill while finishing the slice.
- Microwave the cream until it is at complete boil, quickly add the chopped chocolate and stir until all chocolate is melted. You can cheat by using small chocolate melts, for this one I used 2/3 dark and 1/3 milk chocolate
- Pour chocolate over the prepared base and chill until the base is completely set and the top is set but ‘fudgey’. Cut into squares and eat!
- It should be kept in the fridge but i can’t see it lasting that long…….
